The ingredients used come from local friends/producers – the olive oil is extra virgin oil produced in Kalamata by Tsakanikas family. The seafood is local fished, our tuna is caught by Captain Skefo Bizania. The Kelaiditis farms provide our pork and beef located in northern Evia. The beef fillet and chicken are from Katzilieri farm in Leros. Our legumes are organic and of Greek origin. The majority of the fresh vegetable is grown in our gardens or is from the island of Lipsi.
